Allow time for oven drying and cooling

Make a little or a lot, depending on the leaves you have. Drying time varies with your oven and the amount of celery.

Give spare celery leaves a second helping as a homemade seasoning for vegetables, soups and dressings.

Ingredients

  • Fresh celery leaves
  • Salt — use 2 parts salt for every 1 part dried celery leaves, measured by volume

Method

  1. Wash the leaves and pat dry. Arrange in one layer on a baking tray.
  2. Dry at the oven’s lowest setting until crisp, checking regularly. Let them cool completely.
  3. Crumble, measure, then combine one measure of dried leaves with two of salt. Keep in an airtight container.

A little goes a long way

Use a small pinch in place of some of the salt you would normally add to a dish.

Make the most of what’s left

Celery and its leaves — Keep spare celery in the fridge, wrapped in a damp tea towel. Wash fresh leaves and add them to soups or salads while they’re fresh.
