A creamy chocolate pudding that makes good use of ripe avocados. Two overripe bananas can take their place if that’s what you have at home.

Ingredients

  • Flesh of 2 ripe avocados (about 240g), or 2 overripe bananas
  • 40g cocoa powder
  • 60–120g plant milk
  • 1 teaspoon vanilla extract
  • 2–6 tablespoons fruit syrup, to taste

Method

  1. Put the avocado or banana, cocoa powder and vanilla in a blender or food processor. Add 60g of the plant milk and 2 tablespoons of fruit syrup to start.
  2. Blend until completely smooth. Add a little more plant milk for a softer texture, up to 120g in total. Taste and add more syrup if you like, up to 6 tablespoons in total.
  3. Spoon into four serving glasses or small bowls. Cover and chill in the fridge for 1 hour before serving.

Make it your own

Use less milk for a thicker mousse, or a little more for a softer, creamier pudding. Ripe or lightly browned fruit is useful here, but do not use mouldy or spoiled fruit.
